Vegan picnic sandwiches
Sandwiches are the quintessential picnic finger food. They’re versatile, easy to eat, need no cutlery, and are super tasty when you use the right fillings.
Crispy marinated tofu
Tofu is made of condensed soya milk, which is formed into blocks. That probably doesn’t sound very tasty, but the beauty of tofu is that it soaks up flavour like a sponge.
To make it taste amazing, you need to marinate it — ideally overnight. You can make your own marinade or use one of our ready-made pastes.
Harissa is a spicy red paste that originated in Tunisia. It’s made with red chillies, garlic and spices.
Chermoula paste is found in north African and Moroccan cuisine. It’s a punchy paste made with fresh herbs, garlic, peppery spices and zesty lemon.
To make your marinated tofu crispy, you’ll need to oil a pan and set it to a high heat. Add your tofu and the remaining marinade, then fry it for about a minute each side. This will make the tofu crispy on the outside and help to seal in the flavour.
Once fried, you should oven bake the tofu for 10-12 minutes. Allow it to cool fully, then add a layer to your vegan sandwiches and top with your choice of fresh salad vegetables. We like a mix of shredded carrot and cabbage, which add crunch and sweetness.
Sliced vegetables with pesto
These vegan picnic sandwiches combine the crunch of fresh healthy vegetables with delicious herby pesto for a taste of Italy.
For this sandwich, we recommend using a French stick, sliced into sections then halved lengthways.
Start by layering shredded lettuce, carrots, onion and tomato slices on the bottom half of the bread, then spread on your pesto. If you don’t want the pesto seeping into the bread, add a layer of thinly sliced courgette before the top goes on. Buon appetito!
Peanut butter and jelly
Create a taste of America with these vegan picnic sandwiches. The filling is a sweet combination of moreish nut butter and fruity jam.
Vegan grain salads
A seasonal grain salad is easy to make, travels well and is ideal for a picnic. We sell two different kinds of grain: couscous and quinoa.
Our Tree of Life Wholemeal Couscous is made with fine-grain wheat.
To prepare your salad, mix two parts vegan stock to one part couscous in a saucepan. Bring the mixture to the boil, simmer for 10 minutes, then drain it and let it cool.
When the couscous has cooled fully, you can add your salad vegetables. We like a mixture of spring onions, red pepper and cucumber. To make it extra tasty, stir in some vegan pesto and top with a sprinkling of pine nuts.
Pearl couscous salad
Our Artisan Pearl Couscous is made from 100% durum wheat. The larger grains give the couscous a rice-like texture.
The couscous takes just 12 minutes to prepare. Once cooked and cooled, you can add your choice of salad vegetables.
We like sweet tomatoes with diced cucumber, fresh basil and parsley. We make a dressing of olive oil, lemon juice, vegan honey* and Dijon mustard, then sprinkle in some golden raisins and walnuts to make it extra special.
*A little agave syrup makes a delicious, bee-free alternative to honey.
